A few weeks ago it was my favourite day of the year – National Pina Colada day!!! I adore pina coladas they are the tastiest, most summery of cocktails and if they are made with coconut milk even little old dairy intolerant me can drink one. So when I received a load of pina colada goodies from Funkin Cocktails I decided to try something different and turn them into some yummy alcoholic ice lollies.

I decided to use real fresh pineapple cut up into chunks along with a slosh of Malibu and two mini pouches of Funkin Cocktail pina colada mix. I mixed up all the ingredients into a small jug and poured into my ice lolly moulds.

After a few hours in the freezer these tasty lollies are ready. The fruit had floated to the top a bit but this did mean when your eating them you get yummy frozen pineapple at the end. They were so tasty and such a good idea for a barbecue or party.
The Funkin cocktail mix made them really really quick to make but I would also like to try them with a homemade pina colada mix too, with lots of coconut milk in. Yum! I’d also like to try some other cocktail recipesmade into ice lollies too like Mojitos or Pimms with lots of fruit and fresh cucumber!!!
